Culinary Team NAIT preparing for competition in Dubai
Members of Culinary Team NAIT will compete against professional chefs from around the world at Emirates Salon Culinaire, which runs Feb. 19-22 in Dubai.
Team NAIT will be involved in two practical cooking competitions, where team members will have 60 minutes to prepare a salmon dish and 60 minutes to prepare an Australian lamb dish, using only the shoulder and leg.
This is the team’s first competition in the Middle East. More than 1,300 young chefs are expected at this particular competition.
“The team will be working under strict time limits,” said team manager Vinod Varshney, who will accompany the seven team members and two coaches from NAIT who are attending Emirates Salon Culinaire. “They have to be well prepared to ensure everything is ready on schedule.”
Team members have been training regularly at Main Campus, simulating the timed competitions. The students and recent graduates who make up Culinary Team NAIT developed their own recipes, with input and feedback from the coaches. In Dubai, their dishes will be evaluated on the basis of composition, originality, taste and presentation.
Varshney said participating in high-level, international competitions is important because it teaches young chefs how to work under pressure in a team environment, while also offering opportunities to network with professional chefs from around the world.
NAIT’s Culinary Arts students must go through a competitive process to be selected to be part of Culinary Team NAIT. Students must demonstrate aptitude, a positive attitude and a willingness to learn.
The team going to Dubai consists of Ashley Broad, Jayden Kresnyak, Juhyun Kim, Derek Flores, Michael Seiffert, Phillip Robidoux, Tiffany Sorensen and coaches Hong Chew and Ian Campbell.
