Culinary Team NAIT to compete at prestigious skills competition in Hong Kong
Culinary Team NAIT returns to Asia next month to compete in the Hong Kong International Culinary Classic 13, where two years ago the team won four silver and six bronze medals.
“The students have been training hard for this international culinary event, where they will compete against professional chefs from around the world,” said Vinod Varshney, team manager. “I’m very confident in the team’s abilities. The skills these students have developed in a short time speak to their dedication and the quality of instruction offered through our Culinary Arts program.”
The Hong Kong International Culinary Classic 13, which begins May 7, is part of HOFEX 2013 – the largest food and hospitality tradeshow in the Asia-Pacific region. Eleven members of Culinary Team NAIT will participate, including students, their coaches and the team’s manager.
The students will compete in both hot cooking and cold plate competitions.
In the hot cooking competition, team members will have only 60 minutes to prepare and present a dish in one of four categories. In the cold competition, participants will prepare appetizers and entrée dishes. In both competitions, the judges will award points based on cleanliness, preparation, presentation and taste. All team members will participate in one hot cooking competition, while three will participate in the cold plate competition.
Members of NAIT’s culinary team include first and second-year Culinary Arts students, as well as apprentices. Team members were selected in January following a cook off. Team members have been training regularly at Main Campus, simulating the timed competitions. They developed their own recipes, with input and feedback from the coaches
“We’re very excited to be returning to the international culinary classic,” said Varshney. “This is not only a great learning experience for team members, but a chance for them to network with chefs from around the world.”
Culinary Team NAIT first competed at HOFEX in 2011, returning with 10 medals. More recently, the team competed at the 2012 IKA World Culinary Olympics in Erfurt, Germany, winning two gold and two silver medals.
