Edmonton chocolatier has a sweet spot for NAIT
Rebecca Grant, owner and award-winning chocolatier at the Violet Chocolate Company, hopes her artisanal treats fill what she sees as a “chocolate void” in Edmonton.
As a producer of small batches from her home kitchen, Grant knows she’s up against big competition, but it’s not her goal to sell at that corporate level. “I’m aiming to have a boutique experience where each piece is hand-made,” says the 26-year-old entrepreneur.
Often, those pieces lean toward the unusual. From avocado and wasabi sushi roll-inspired chocolates to salt and vinegar chip or red cayenne jalapeño chocolates, Grant creates uniquely flavoured chocolates using unexpected combinations of savoury and sweet flavours.
Grant graduates this week from NAIT’s JR Shaw School of Business, one of Western Canada’s largest business schools, with a diploma in Business Administration – Marketing. Also a Red Seal chef, this is the second NAIT program Grant has completed. She graduated from the two-year Culinary Arts program in 2008.
Grant returned to NAIT to sharpen her business acumen and refine her marketing techniques, and her hard work is paying off. Grant’s Honey Rosemary bar won gold for Best Flavoured Milk Chocolate at the 2013 Canadian National Competition at the International Chocolate Awards. And she’s competed in the International Chocolate Awards in London, where she made it to the final round.
