Culinary Team NAIT returns to prestigious skills competition in Hong Kong
Culinary Team NAIT returns to Asia next month to compete in the Hong Kong International Culinary Classic 15, where two years ago the team won four gold, eight silver and eight bronze medals – setting a new record for NAIT.
The Hong Kong International Culinary Classic 15 begins May 6, and is part of HOFEX 2015 – the largest food and hospitality tradeshow in the Asia-Pacific region. Thirteen members of Culinary Team NAIT will participate, including 10 students, their coaches and the team’s manager.
The students will compete in both hot cooking and cold plate competitions.
In the hot cooking competition, team members will have only 60 minutes to prepare and present a dish in one of four categories. In the cold competition, participants will prepare appetizers and entrée dishes. In both competitions, the judges will award points based on cleanliness, preparation, presentation and taste.
Team members have been training regularly at NAIT, simulating the timed competitions. They developed their own recipes, with input and feedback from the coaches.

- Members of NAIT’s culinary team include first and second-year Culinary Arts students, as well as apprentices.
- Team members were selected in January following a cook off at NAIT.
- HOFEX takes place every two years.
- Competitors are required to bring their own knives, pots, pans and dishes. NAIT has shipped 700 kg (1,500 pounds) of these supplies to Hong Kong to supply the culinary team.
