Didier Rosada comes to NAIT Sep 11-14

Participating in professional development opportunities in one of the most important ways our faculty members maintain a high level of skills. This year, we are pleased to announce that our faculty members from the baking program and the culinary arts program worked with a true icon of the baking world this fall.

Didier Rosada is one of the world's most respected bakers, educators and coaches for the baking industry. He has coached the USA Coupe de Monde de Boulangerie Team to 3 gold medals and 1 silver medal from 1996 to 2005. He has trained bakers and consulted with companies in numerous countries around the world. He is a Certified French Master Baker, and the Master Baker and Vice President Operations at Uptown Bakers in Hyattville, MD, USA.

During his three days of training, Didier lead sessions on new mixing techniques, flour quality characteristics, sourdough processes, whole grain flours, seeded breads and ancient grains. Didier provided lectures throughout and all participants produced breads under Didier's guidance.
