Workshop 1: All About Sourdoughs
Unravel the mysteries of sourdough cultures in this workshop. Understand the complexities to feeding, elaborating and maintaining a variety of sourdough cultures. Learn how to incorporate multiple preferments within a formula, and gain an understanding of the advantages and challenges when using multiple preferments. Correct mixing techniques, fermentation schedules and appropriate baking times will be covered in this hands-on course.

Workshop 2: Laminating with Flair
Learn new and innovative Viennoiserie techniques for making beautiful and delicious breakfast pastries with Chef Ciril Hitz. This hands-on course will provide valuable instruction for making delicate and flaky pastries (both sweet and savory), covering everything from the classics to contemporary interpretations. Laminating as well as proper mixing and fermentation techniques will be covered as Ciril demonstrates practical ways that you can be artistically creative and finish your pastries with flair!
