Chef in Residence 2012
Chef Massimo Capra brings his passion for life and all things gastronomical to NAIT as the 2012 Hokanson Chef in Residence.
Chef Capra is the chef and co-owner of Toronto’s Mistura Restaurant and Sopra Upper Lounge. He is also an award-winning author and television host, perhaps best known for his appearances on Food Network’s Restaurant Makeover.
Born in Italy, Chef Capra’s culinary training began in Salsomaggiore, Parma. He then went on to work in Italy’s best restaurants and hotels before coming to Canada in 1982.
In Toronto, he mastered the English language and his own style, joining forces with Paolo Paolini, formerly of Splendido Restaurant, to open Mistura Restaurant in 1997. Sopra Upper Lounge followed in 2006.
He recently completed the opening of Fraticelli Italian Grill and the re-branding of the famed restaurant The Rainbow Room in the Crowne Plaza Hotel in Niagara Falls.
