Perry Michetti embarked on his journey in culinary arts and hospitality at a young age. His passion for flavour and quality ingredients started with his family, especially with his mother and father. Growing fresh vegetables and making a variety of charcuterie products was second nature in the Michetti family home. Perry graduated with honours from the NAIT Culinary Arts program in 1991 and honed his craft in some of the best restaurants and hotels over the next 10 years. A veteran competitor of culinary salons, Perry received a gold medal in the “Restaurant Platters” category in 1994. In 1998, he achieved his Certified Chef de Cuisine (CCC) designation, the highest level of culinary education in Canada.
Perry returned to NAIT as an instructor in 1999, where he continues to learn from, teach and mentor young chefs with his family-tested philosophy: “fresh ingredients, treated wisely, will always produce excellent results.” Perry was formerly the associate dean of the School of Hospitality and Culinary Arts, and in June 2016 was named Manager of Operations for the Department of Culinary Arts and Professional Food Studies as well as the School of Skilled Trades. He was instrumental in the creation of the Hokanson Chef-in-Residence program in 2009. He has helped organize numerous culinary student international exchange programs and has travelled with students to Italy and Austria to explore classical cooking techniques and regional culinary trends.
Perry is an advisor with several hospitality associations and is an active member of the International Culinary Tourism Association (ICTA), the Canadian Culinary Federation of Chefs and Cooks (CCFCC), the International Association of Culinary Professionals (IACP) and the International Council on Hotel, Restaurant and Institutional Education (CHRIE). Perry recently won the Outstanding Member of the Year award from the CCFCC and was named one of Alberta’s 50 Most Influential People in 2014.
