CTS22 CTS Summer Institute - Foods II

This Intermediate level of Summer Institute for foods teachers will cover some of the curriculum elements of baking, pastries and cold foods as well as revisiting nutrition, sanitation, food lab safety and teamwork in preparing class projects. Teachers will be making Austrian (Croatian) strudel, choux paste and éclairs, cakes, French bread and an assortment of canapés in the NAIT state-of-the-art kitchens .The class will also touch on sandwich ideas, chocolate work, cake decorating, glazes and various places to shop for food in the Edmonton area.

Footwear and clothing appropriate for a food lab setting must be worn.

Students may apply for a Tuition Grant to a maximum of $400.00 at http://www.carcpd.ab.ca/CTS_PD/index.html

Prerequisites: CTS20 and currently teaching CTS.

Hours: 39.00
