What role will nutrition play in your operation? Spend one portion of the course reviewing nutrition, the importance of different elements and nutrients, and dietary restrictions and allergies. Spend the other portion considering how you will plan and implement a menu to cover the needs of health conscious consumers. Additionally, you will examine the impact of cooking techniques on nutrient retention and cooking techniques for reducing fat. The final outcome is to equip you with the ability to apply nutrition knowledge for recipe modification, food preparation and menu planning.
You will be evaluated on your assignments and final exam.
