The menu is the single most critical element affecting a restaurant – the items, how they are presented and selling price all affect a customer’s acceptance and impact the chance for repeat business.
Focus your learning on the various menu types and create menus to meet the specific needs of different customers. You will also explore menu design, development, pricing and methods for analyzing sales data.
Your evaluation will be based on a final exam.
Recommended: Thorough knowledge and experience in food preparation techniques and styles.
