Professional Meat Cutting and Merchandising
The Professional Meat Cutting and Merchandising (PMCM) program involves an intensive 15 weeks on campus with 90 hours of practicum that will give you the skills to prepare and market a wide variety of meat, poultry and fish items. Classroom theory – including business procedures, food sanitation and trade calculations – are complemented by hands-on training in a fully equipped meat-training lab, in conjunction with the NAIT Retail Meat Store.
The PMCM program is offered twice a year: September and January.

Graduates are in demand at grocery and specialty stores, supermarkets, delicatessens, meat packing and processing plants and other meat inspection services.
