You want to be a baker. You want to prepare breads, cakes, cookies, pastries, pies and other baked goods. You are already comfortable weighing, measuring and mixing ingredients according to recipes.

But you want to learn more, like how to fry doughnuts, prepare pastry fillings or decorate baked goods. Maybe you want more experience working in an industrial kitchen operating production machinery.

In this trade you will be able to prepare breads, cakes, cookies, pastries, pies and other baked goods. A baker may work early morning shifts and requires a great deal of math skills, a hard work ethic and physical dexterity to fulfill all the requirements of working as a baker.

  •  achieving provincial certification in hygiene and sanitation
  • training in emergency first aid
  • cutting and forming dough
  • using ovens to bake products

  • Both On-Campus and Virtual - Some of your coursework will be in-person, on campus and some will be done online.

Periods: 3

Apprenticeship is a method of gaining the expertise needed to become a skilled tradesperson. This is done through a combination of on-the-job experience and classroom training.

Most apprenticeship programs are 3-4 periods in length, with an average of 8 weeks for each training period. In addition, there are specific allotments of on-the-job training hours associated with each period, so most apprentices complete 1 period per calendar year.

Hands-on, industry-relevant skills

If you like creating things with your hands and desire a stable and secure career, then you’ll enjoy working as a baker.

Bakers work indoors in clean, well-ventilated and well-lit environments. Depending on your role, you may often have to work long shifts or overnight.

Training at NAIT

The Baker apprenticeship term is:

  • 3 years (three 12-month periods)
  • minimum 1560 hours on-the-job training each year
  • 8 weeks of technical training each year

You will also get the opportunity to participate in NAIT Bakes: A Canadian Masters Workshop, a unique hands-on professional development workshop where bakers can learn and practice new techniques with some of North America's most renowned baking educators.

Enter the workforce with confidence

As a baker, you will be employed in retail and wholesale bakeries, supermarkets, hospitals, institutions, hotels, catering companies, restaurants or camps. Employment is fairly steady and consistent throughout the year.

Experienced bakers can advance to supervisory positions, or you can start your own business. The skills you learn as an apprentice baker are transferrable to related occupations such as cook, pastry cook, cake decorator, baking instructor or salesperson for a supply company.

How to Apply

Complete an apprenticeship application & contract form

Effective November 1, 2014, you must fillout the application located on the MyTradesecrets website for Alberta Apprenticeship and Industry Training Board staff to determine if you are eligible for status as an indentured apprentice.

Dates & Deadlines

Once you are an indentured apprentice, you can review the availability and start and end dates of the program you are interested in. Log into your MyTradesecrets profile and do a search under the Class Registration section. Then you can determine the schedule that best fits your needs.

We recommend submitting your program application at least 90 days before the application deadline.
