The patisserie class introduces students to a refined ala carte & buffet service and banquet production in a dining room environment. Students in this course apply concepts, skills and techniques for preparing classical and contemporary desserts and pastries for an upscale dining room. Emphasis is placed on plated desserts, show pieces, fancy gateau and pastries.
