Course Overview
The National Canadian Culinary Institute (CCI) written exam is a three-hour examination that is a comprehensive exam covering cost controls, human resource management, menu planning and nutrition. A minimum grade of 70% is required to progress to the practical exams.
Enrollment in this course is based on a first-come, first-served enrolment process. Passing this course at NAIT does not automatically guarantee a spot in the exam. Students who have completed their pre-requisites from other institutions are eligible to apply as long as they provide proof of completion.
