Course Overview
The National Canadian Culinary Institute (CCI) practical exam is two days in length. Day 1 is an "office day" where the menu is written, standard recipes are prepared and costed, and food requisitions are written. Day 2, the "kitchen day" of the practical exam, consists of the preparation and execution of the Day 1 menu.

Enrollment in this course is based on a first-come, first-served enrolment process. Passing this course at NAIT does not automatically guarantee a spot in the exam. Students who have completed their pre-requisites from other institutions are eligible to apply as long as they provide proof of completion.
