Prepare to write the Alberta Provincial Journeyman Cook Examination and Red Seal Certification. All areas of cooking are revisited and reviewed including Pastry, Garde Manger, Range and Sanitation and Safety. Covering all three years of the apprenticeship curriculum as well as current ILMs, this theory-based course will be taught in the classroom. There will be no hands-on kitchen work in this course.
With the skills gained in this course, you will be prepared to write the Journeyman and Red Seal examination.
