Retail Meatcutting

NAIT’s Retail Meatcutting Certificate is an intensive 5-month program that gets students into the workforce quickly. Our graduates have a 90% employment rate.

Meat merchandising and customer service are essential features of the Retail Meatcutting program. It also provides hands-on instruction in:

  • working with beef, bison, pork, lamb, seafood and poultry
  • producing cured, smoked and processed meat and sausage
  • purchasing product

Sanitation, safety and quality controls are also emphasized. A 3-week work experience component provides further on-the-job training. Most students are offered jobs at one of their work experience sites.

Classes are held in our Retail Meat Lab, which features the latest in power machinery and technology. Our in-house meat store provides our students with experience in customer service, display and merchandising, and our customers with fresh, reasonably priced product.

After graduation

Program graduates are ready to work in positions in:

  • the meat industry
  • supermarkets
  • speciality delicatessens
  • meat packing and processing plants
  • meat grading and inspection services
